Easy Meatloaf
Time prep: 15 min / Cook time: 45 min Servings: 8 servings
Ingredients2 lb. lean ground beef,
1 cup water 2-3 beaten eggs Onion chopped Mushrooms chopped Garlic - finely minced or Garlic seasoning 1 pkg of Stove Top Stuffing any flavor Salt & Pepper for taste or other seasonings Sauce: Ketchup and BBQ sauce mixed |
SubstitutesFor the Sauce:
Ketchup with Worstershire Just a sweet and tangy BBQ Sauce Spaghetti sauce For the Stove Top Stuffing: Cooked Soft Rice Baked Bread cut into small squares Croutons - The LARGE BUTTERY ONES with air holes not the HARD ONES |
What to Do
HEAT oven to 400°F.
Mix ground beef, water, eggs, onions, mushrooms, garlic, 1 pkg. (6 oz.) STOVE TOP Stuffing Mix - DRY DO NOT MAKE
1/4 cup sauce and seasonings - somtimes I add more if it looks too dry but not much more.
Use your HANDS and mix it really well
SHAPE meat mixture into oval loaves on foil-covered baking sheet; OR Put into Meatloaf pans
Top with remaining sauce. I like my topping THICK so I add lots of sauce on top!
BAKE 30 to 45 min. or until meatloaves are done with knife inserted in center comes out clean!
Don't OVER COOK or it will be dry. Usually about (160ºF).
Note: Sometimes close to the end of baking or when it looks like it is almost done...
I add: A little sprinkled cheese on top - this is Optional if you want to! ( Mozzarella cheese or Colby Jack works best )
